When you’re in the middle of an ice storm, make pancakes {recipe}

I have to admit, I am only three weeks in to the New Year and I am already feeling like I am falling behind. I am struggling to find the time to sit and write. It is a lot of work to keep up a blog. I often feel most inspired when I am cooking a meal my family loves. Just getting the opportunity to sit so I can share with my readers is difficult. I hope to get better at this so my posts will be less sporadic and I can post more than once a week.


This winter has been quite an interesting season, and today was no exception. This morning we woke up to a beautiful site of everything outdoors being covered in ice. Mother Nature never ceases to amaze me. I was extremely eager to get out my camera and capture it all. But as soon as I stepped out onto our deck, I went sliding. (Feel free to laugh, because I sure did.) My dog, however, did not and slid her way back into the house as quickly as she could.


This icy, rainy day was a perfect day to make a favorite for my girls – chocolate chip pancakes.


Chocolate Chip Pancakes

Here is what you will need:
2 cups all purpose flour
1 cup whole wheat flour
1 tsp salt
6 tsp baking powder
2 Tbsp honey
2 ½ cups milk
2 eggs
½ cup mini semi-sweet chocolate chips

Here is what you need to do:
Mix together all purpose flour, whole wheat flour, and salt in large mixing bowl. In a small bowl, whisk honey, milk, and eggs. Pour milk mixture into flour mixture to combine. Add chocolate chips. Drop about 1/3 of a cup of pancake batter onto a hot griddle. Cook until both sides are golden brown. Repeat with remaining batter. Serve with favorite toppings.


This is a perfectly sweet treat for breakfast, lunch, or dinner. This recipe can easily be cut in half if you don’t have a house full of little kiddos like I do. Or they are great to freeze and pop in the toaster to warm up when you need a quick meal.
